Our olives in the 100-120 year old ancestral olive trees inherited from our ancestors in Aydın begin to form in October – November. Olives are green at first. During the ripening period, olives are picked without getting black. The collected olives are washed and cleaned, and then they are broken on a clean board with the help of a stone. Broken green olives are made in brine.
