In the production of our hot pepper paste, which is carefully prepared by our Aydınlı aunts in the villages of Aydın, red peppers with meat, grown in our fields with good agricultural practice, are used without pesticides. The meaty hot peppers collected from the field are washed, cleaned and then chopped. It is placed in large containers and rock salt is added on it. It is mixed regularly every day. When hot red peppers start to melt, they are separated from their skins and seeds by sifting through a fine sieve. After the hot red peppers are filtered, the dense water that emerges is placed on trays to condense even more and kept under the sun. When the organic hot red pepper paste gets the expected consistency, it is put in glass jars, olive oil is added on it, and the lids are closed. Olive oil prevents the hot pepper paste from spoiling. In this way, hot pepper paste always stays fresh.
