Olives in the 100-120 year old ancestral olive trees inherited from our ancestors in Aydın begin to form in October – November. Olives are green at first. During the ripening period, the olives are harvested while they are still green in color without becoming black. Picking is done manually, not by machines. The collected green olives are washed and cleaned, and then the green olives are scratched. Drawn green olives are made in brine.
